Briefly:   The well seasoned athlete is about enjoying life and eating well as an active athlete.

The well seasoned athlete is about how athletes of all types can learn to be better cooks and eat well.  Here you will find tips and instructions on how to shop for ingredients, choose recipes, prepare delicious and healthy foods from scratch.  Emphasis will be on ingredients, technique, affordability and ease of preparation.

From the start my life in cooking and athletics has been about fun and flavor. If it doesn’t taste good and look appealing then there’s a pretty good chance you’ll eat less, enjoy your meals less and won’t go back for more.  So much of what we do in restaurant kitchens is obsess on ingredients and flavor.  Presentation is key to whetting the appetite. How we bridge the gap between raw ingredient and finished plate is about treating the ingredients with respect and applying our cooking skills deftly to showcase their attributes of flavor and texture.

As athletes we need energy to engage in the sports we love.  Getting the energy required to make that happen can be both a challenge and a gift.  Eating right and eating well are not polar opposites.  The best and freshest ingredients will fulfill both criteria. Super flavor, all the nutrients available and just what we need to help the creative juices flow.  Developing the skills to shop wisely, cook carefully and eating intelligently are not that difficult to attain.

The information, recipes and techniques we’ll offer may well have little to do with acheiving weight loss.  Some ingredients and recipes will be far from low-calorie or low-fat categories.  While any of the recipes and techniques can be applied to all manner of cooking we won’t be focusing on those areas of diet.  Portion sizes can be downsized, ingredients substituted, cooking technique altered for those who are concerned about calorie, fat or other dietary restrictions.  We will suggest areas in each recipe where this may be easiest to achieve.

Here at The well seasoned athlete we will break it down, give the recipes life, context and the encouragement  to eat well, everyday.  Have fun with it.

About Thom:

A number of moon’s ago I started running while attempting to get for fit to race motocross.  One thing led to another and after six years of enjoying motocross I ended up running more…..and….more.  Entered races and moved to age group racing as a hobby.  Did several marathons on the way along with everything else in sight. 5k’s, cross country and more.  Highlights are a 2:52.32  marathon PR, a 15:56 5K, several sub 36min 10K’s along the way and a 1.25:00 Half Marathon when I hit 55 years of age.

Began the transition to cycling back in 2001.  Now I mostly ride and race on the bike, cyclocross being the current passion.  After a couple of seasons learning how to ride cross effectively I have more than a few podium finishes in several age group categories.

Professionally I have cooked  for 3 decades, working and running some wonderful restaurants.  Fog City Diner,   Accme Bread Company, China Moon Cafe, Acme Chop House, Public House sf, Eddie Jacks, Nojo Restaurant to name a few.  Cooking in many styles,cuisines, and venues allows me to think and cook as the seasons change, improvising with whatever is available, whether it be ingredients, equipment, kitchen or number of guests.
